I recently spent a long weekend in Denver. Food highlights included the Konjo Ethiopian food stall at the Mlik Market, a downtown food hall, and the tacos at El Cimino at Highlands Square. I was most impressed, however, by Odell's Bagels, also near Highlands Square. There are a few Japanese influences here, including hamachi as a topping and furikake as a bagel seasoning. Put them together, and you have a Japanese-inspired version of bagels and lox. It's possible to split a bagel between two toppings. so I had furikake with hamachi on the right half and more traditional smoked salmon on the left. Both worked equally well.
